Great Sparkling wines come from cool climates which is why Grace Under Pressure Blanc de Blancs is made from 100% Chardonnay, all sourced from a single site in the Mt Gambier sub region of the Limestone Coast, home to the coldest maritime vineyards in mainland Australia.
The result is a high quality, sparkling wine with a delicate and balanced bouquet of lemon, white flowers and green apple. The palate holds poise and is enlightened with crisp notes of fresh apple and citrus blossom. All encapsulated by a tingly yet precise and long finish.
Mt Gambier/Limestone Coast
Mount Gambier is located in the furthest South East corner of South Australia, on the gentle slopes of a dormant volcano. The dramatic coastal region is scattered with sinkholes and lake filled craters.
The cool maritime climate and diverse soil profile comprising of fertile volcanic loams and sands with a limestone underlay, make the region ideal for growing premium cool climate sparkling varieties such as Chardonnay and Pinot Noir.
The vineyards’ close proximity to the Southern Ocean has created an ideal pocket for sparkling varietals. The vines are planted in fractured flinty limestone, with a ribbon of shallow, fertile soil which contributes to the mineral characteristics in our wine. The cool maritime climate produces grapes with delicate varietal flavours and pronounced acidity. Perfect for our sparkling wine.
